Ingredients
For the Cilantro Ranch Dip:
½ cup ranch dressing
2 tablespoons minced cilantro
1 teaspoon lime juice
For the Blackened Seasoning:
1 tablespoon smoked paprika
1 tablespoon onion powder
2 teaspoons salt, garlic powder, thyme, oregano
1 teaspoon cumin and black pepper
1 teaspoon white pepper and cayenne
For the Shrimp:
8 bacon strips, cut in half
15 large shrimp, cleaned, tail on and butterflied
2 tablespoons cilantro
1 jalapeno, cut into julienne strips
1 teaspoon lime juice
Blackened seasoning to taste
4 oz pepper jack cheese cut into ¼ to ½ in. julienne strips
Directions
Mix ingredients for the Cilantro Ranch Dip and place in the refrigerator.
Mix the ingredients for the Blackened Seasoning and set aside.
Bake bacon on a cookie sheet for 3-5 minutes at 425 degrees.
Place one strip of jalapeno and cheese inside the shrimp, then wrap with bacon.
Skewer the shrimp, sprinkle with Blackened Seasoning and lay on a baking dish.
Broil 5 minutes on each side for a total of 10 minutes.
Serve immediately with the Cilantro Ranch Dip.
