Jalapeno Stuffed Shrimp Bacon Wraps



Ingredients


For the Cilantro Ranch Dip:

  • ½ cup ranch dressing

  • 2 tablespoons minced cilantro

  • 1 teaspoon lime juice

For the Blackened Seasoning:

  • 1 tablespoon smoked paprika

  • 1 tablespoon onion powder

  • 2 teaspoons salt, garlic powder, thyme, oregano

  • 1 teaspoon cumin and black pepper

  • 1 teaspoon white pepper and cayenne

For the Shrimp:

  • 8 bacon strips, cut in half

  • 15 large shrimp, cleaned, tail on and butterflied

  • 2 tablespoons cilantro

  • 1 jalapeno, cut into julienne strips

  • 1 teaspoon lime juice

  • Blackened seasoning to taste

  • 4 oz pepper jack cheese cut into ¼ to ½ in. julienne strips

Directions

  1. Mix ingredients for the Cilantro Ranch Dip and place in the refrigerator.

  2. Mix the ingredients for the Blackened Seasoning and set aside.

  3. Bake bacon on a cookie sheet for 3-5 minutes at 425 degrees.

  4. Place one strip of jalapeno and cheese inside the shrimp, then wrap with bacon.

  5. Skewer the shrimp, sprinkle with Blackened Seasoning and lay on a baking dish.

  6. Broil 5 minutes on each side for a total of 10 minutes.

  7. Serve immediately with the Cilantro Ranch Dip.
