Raw Oysters - 5 Ways

Are you a fan of raw oysters? Here at Mt. Lassen Seafood we offer several varieties of oysters that are produced with the intention of consuming raw. All the oysters we offer are farmed in the Pacific Ocean, offering a salty and briny flavor.

The sauces below are spooned over raw oysters after the oyster has been shucked and lightly pried from the shell.


Ponzu Dressing

Ingredients

  • 1 tablespoon soy sauce

  • 1 tablespoon mirin seasoning

  • 2 teaspoons lemon juice

  • 2 teaspoons orange juice

  • Spring onion curls, to serve

  • Orange zest, to serve

  • Toasted sesame seeds, to serve

Directions

  1. Mix the first 4 ingredients, spoon into shucked oysters. Top oysters with the remaining 3 ingredients and enjoy!


mignonette dressing

Ingredients

  • 2 tablespoon white wine vinegar

  • 2 tablespoon red wine vinegar

  • 1/2 teaspoon caster sugar

  • 1/2 teaspoon salt

  • 2 shallots, finely chopped

Directions

  1. Mix the first 4 ingredients, add the shallots. Allow to marinate for at least 30 minutes in the fridge. Spoon the sauce and the shallots over the shucked oysters and enjoy!


Salsa Verde Dressing

Ingredients

  • 1/2 garlic clove, crushed

  • 2 teaspoons finely chopped dill

  • 2 teaspoons finely chopped mint

  • 2 teaspoons finely chopped baby capers

  • 2 teaspoons finely chopped chives

  • 1 1/2 tablespoons lemon juice

  • 2 teaspoons olive oil

  • Salt and Pepper to taste

Directions

  1. Mix ingredients together and spoon over shucked oysters!


Apple Cider Dressing

Ingredients

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon honey

  • 1/2 tsp salt

  • 1/2 Granny Smith apple, cut into matchsticks

Directions

  1. Mix the first three ingredients, add the apples. Allow to marinate in the fridge for at least 15 minutes. Spoon the sauce and the apples over sucked oysters and enjoy!


Lemon-Herb Mignonette

Ingredients

  • 1/2 cup (125 mL) rice wine vinegar

  • 1/2 cup (125 mL) roughly chopped fresh parsley

  • 1 large shallot, finely diced

  • 1 tsp (5 mL) grated lemon zest

  • 2 tsp (10 mL) lemon juice, or to taste

  • 1/4 tsp (1 mL) each salt and pepper, or to taste

Directions

  1. In small blender or food processor, blitz rice wine vinegar, parsley, shallot, lemon zest, lemon juice, salt and pepper until parsley is finely chopped. Adjust lemon juice and seasonings to taste. Spoon over shucked oysters and enjoy!
