This is a local species of flounder (Paralinchthys californicus) that is caught off the coast of California near Half Moon Bay. This fish is considerably thinner than the Alaskan or Pacific halibut we are used to eating and usually comes in fillets as opposed to steaks. It has a white meat and is very mild with a smooth texture and large flakes. Most common cooking methods include sautéing, or baking. If you like fish tacos, this is a great species to utilize.
