Kampachi, also known as yellow-tail or amberjack, is known for its crisp and clean bite, and buttery flavor.  This fish is harvested in the waters of Hawaii and is sold as a whole fillet.  Weighing approximately 1.5 lbs. with the skin intact, this fillet is excellent on the grill, seasoned simply with salt, pepper and a little lemon.
