(Crassostrea sikamea) are sourced from Humbolt Bay, California’s proclaimed oyster capitol. Grown on lines and in baskets suspended in the water column, these shellfish never touch the bottom of the ocean. This species of oyster is defined by its small size and smooth, some say sweet flavor. It is a favorite with both oyster aficionados and novice oyster lovers because of its milder flavor and smaller size when compared to most other oyster counterparts. Many enjoy eating them raw, but they are also savored after roasting or grilled and then topped with a signature sauce, brine or liqueur of your preference.
