1/3 cup panko bread crumbs
4 teaspoons finely chopped shallot
2 teaspoons snipped fresh dill
1 tablespoon prepared horseradish
1 large egg, beaten
1/4 teaspoon salt
1/8 teaspoon pepper
1 pound Mt. Lassen Ground Steelhead, thawed
8 whole wheat dinner rolls, split and toasted
1/4 cup spreadable garlic-herb cheese
8 small butter lettuce leaves
In a large bowl, combine the first 8 ingredients, mixing lightly but thoroughly. Shape into eight 1/2-in.-thick patties.
On a lightly greased grill rack, grill burgers, covered, over medium heat until a thermometer reads 160°, 3-4 minutes on each side. Serve on rolls with spreadable cheese and lettuce.
