1/4 cup butter
6 tablespoons Cajun seasoning
2 tablespoons paprika
2 limes, cut into 4 wedges each
Melt butter in a small bowl.
Mix Cajun Spice mix with Paprika in a shallow plate.
Brush fish filets with butter then press down on spice mix.
Heat a skillet on med-high heat. Add the fillets one or two at a time and cook 3 minutes on each side. Remove from heat and serve immediately with lime wedges.
Fish spice will turn black when cooking and the kitchen will get smoky. Open a window and turn the exhaust fan on high to limit the smoke. Scrape frying pan between batches. Fish is done when it flakes easily. Enjoy!
